At Brigade, we make our pizza dough the exact same way it was done hundreds of years ago in Naples Italy, before the invention of refrigerators and commercial products. We only use four natural ingredients, water, sea salt, fresh yeast and 00 flour, the finest milled flour imported from Italy.
Our dough is fermented naturally over 24 hours in a room temperature controlled environment that is the same as the Mediterranean climate, where Neapolitan pizza was born. When our dough is cooked in the Brigade wood burning ovens, you get the perfect amount of char, soft and chewy crust.
