Brigade Returns to Counter Service

In August 2014, we opened the doors of Brigade with a simple idea: a lineup-style pizzeria where everyone felt welcome whether for a family night out, a quick lunch, or a casual hang with friends. Inspired by military canteens (hence the name “Brigade”), we wanted to serve authentic Neapolitan pizza in an environment that was relaxed, fast-paced, and stress-free.

Over the years, we’ve evolved. We introduced table service. We added cocktails. We tried to match what we thought people were looking for. And while we’re proud of everything we tested and tried it never felt quite right to us.

Over the past three years, Grace and I have spent countless hours thinking about the customer experience. We realized that despite all the bells and whistles, something was missing: the simplicity and joy that got us into this in the first place. The energy of the counter. The flow of people grabbing a menu, choosing their pizza, and just enjoying their moment.

So now, we’re going back to the service style that feels most like us counter service.

Here’s how it works:

  • You come in, grab a menu, and order at the counter.
  • You pick up your own napkins, cutlery, and drinks.
  • You sit wherever you like and relax.
  • When your food is ready, we bring it to your table.

Simple. Friendly. Fast. Just like it was meant to be.

What hasn’t changed and never will is our commitment to great food.

We make real Neapolitan pizza. Detroit-style pizza. Sicilian slices. All with long-fermented dough, honest ingredients, and no shortcuts. No gimmicks. Just the truth baked fresh, every day.

Brigade was built for the people. And now, with this return to our roots, we feel the wind behind us again.
